Slow Cooker Lentil & Sausage Soup

The weather is slightly gloomy today. I am reserving the right to enjoy a lazy day indoors. Pajamas, heater, candles, an episode or two of Top Chef, and slow cooker soup.

This lentil & sausage soup is so easy. I prepped the ingredients last night, and set the slow cooker to simmer all night. By morning, our house smelled wonderful and we had soup to warm us up. The soup is a complete meal that’s high in protein, fiber, and nutritious vegetables.

Slow Cooker Lentil & Sausage Soup

Ingredients:

1 medium onion, chopped
2 carrots, diced
2 stalks celery, chopped
4 cloves garlic, minced
1 14.5-ounce can diced tomatoes
1 pound dried lentils
2 cups diced sausage
2 quarts chicken broth
1 teaspoon dried oregano
2 bay leaves
1 teaspoon dried thyme
1/8 teaspoon cayenne pepper
salt & pepper to taste

Instructions:

Mix all ingredients in a slow cooker. Cook for 9-11 hours on low or 5-7 hours on high.
