I discovered this little eggplant in our garden. Is it not the cutest vegetable you’ve ever seen?
It is the first eggplant to come from the plant that I’ve had since March, so I excitedly showed it to Steve. I’m not sure if his enthusiasm reached the heights of my own.
It made approximately one serving of sauteed eggplant. Hopefully there’s more to come!
